Vegan Casserole:
This one pot Casserole is Super-Simple to make and will leave you and your loved ones for craving for more! Try for yourself 🙂

Ingredients for Sauce:
1cup Cashews soaked for 4-5 hours/overnight
2tsp Sesame Seeds
2tsp Mustard seeds
10-12cloves of Garlic
1/2-1tsp Cumin powder
Salt as per taste
Jaggery as per taste
1/2 tsp red chilli powder
2 cups water.
Lemon juice

Other Ingredients:
2-3 large potatoes
1 bunch Spinach
1 Small Cauliflower
1cup cooked brown rice
Coconut oil

Procedure:
Slice the potatoes very thinly
Preheat the oven at 200deg C for 10 mins
Blanch the cauliflower florets in turmeric water
Grind only soaked cashews (rinse off the water)
Slowly add in all the sauce ingredients and blend
Grease the baking dish with coconut oil
The first layer of potatoes are greased with coconut oil
Pour in some sauce
Layer with brown rice, spinach and cauliflower florets
Repeat the layering (no need of greasing potatoes with oil this time)
Bake at 200deg C for 30mins
Grilll at 250 deg C for 15 mins
Serve hot 🙂
